My work has a group called “Project Fun” that organizes events around our office. One of our annual events has been a chili cook-off. This year we integrated a cornbread competition and guess what?! I won!
One of my coworkers teased me saying I was disqualified since it was more of a casserole than a bread but I think he was so blown away at how delicious it was! I made a recipe that’s actually super easy that I got it from Dave’s aunt who makes it every Thanksgiving and Christmas. She also gave me her corn salsa recipe that I’m a fan of and might have to make just as an app for next year’s competition.
- 1-15 oz can corn (drained)
- 1-15 oz can creamed corn
- 1 stick of butter (melted)
- 1-8 oz box of Jiffy corn mix
- 1-8oz container sour cream
- Mix all ingredients (adding the corn muffing mix last).
- Grease the casserole dish (or crock pot).
- If using a casserole dish, bake on 350°F for 45 minutes.
- If using a crock pot, bake on high for 1.5 hours, medium on ½ hour or low on 3 hours.
I’m a sucker for hot foods so my favorite was one that was called “Where there’s smoke, there’s fire!”. I also was a fan of a chili in our “Anything Goes” category with an Asian flair on it that was called “East Meets Southwest”. It was served in a lettuce wrap with some sriracha and lime juice on it. Overall, there were some pretty delicious flavors out there so it was a hard job to be a judge.
After the judging was complete and the winners were announced, we all just socialized and enjoyed ourselves. This might have included posing with some giant pepper cutouts…
…and taste testing ONE bottle of bacon soda that a former coworker who moved away sent us. It doesn’t really taste like bacon and it is not something I would seek out or maybe even drink if it were the only thing available…BUT I’ll try almost anything! Thanks Champa for the bacon soda! Please send me some jelly beans and candy now! K-thanks! 🙂
