I had featured some of my favorite meal prep recipes in the past and I thought it would be worth it to share some of my favorite finds as I go. I like to find recipes that are fairly easy, healthy, and can be made to have leftovers for lunches or other meals during the week.

Beef and Pepper Stir Fry
One thing Dave and I love about going out to eat is that we often get inspired to make dishes at home. One of our favorite chinese take out meals is beef and long horn pepper. I got curious and wanted to try to make it at home. I found a recipe on The Woks of Life and fell in love with it! It’s pretty easy and tastes better than takeout because it’s homemade! Peanut Butter Jelly Overnight Oats
Overnight oats are pretty easy because you basically throw everything in a jar and let sit for the next day. I was feeling like some chocolate peanut butter jelly so found a chocolate peanut butter oats recipe on Wholefully. I used a fage raspberry yogurt which gives it the “jelly” feel! I’ll cut up some banana and maybe even throw in some dark chocolate chips!
