I had featured some of my favorite meal prep recipes in the past and I thought it would be worth it to share some of my favorite finds as I go. I like to find recipes that are fairly easy, healthy, and can be made to have leftovers for lunches or other meals during the week.
You may often see me post on my instagram stories the food prep I am working on each Sunday. I sometimes wish that I weren’t a food prep person but I am a food prep person. If I don’t spend time on the weekend getting dinners and lunches ready for the week–I end up getting a lot of takeout or eating a lot of things not so good for me.
I thought I’d start to share some of the recipes I like to make on Sundays that make my weeks easier!
Blueberry Baked Oatmeal Muffins
These are seriously such a go-to for me! I make these almost every week. Sometimes I’ll make a double batch and freeze half. They are a perfect breakfast, second breakfast or snack!
Easy Spaghetti Squash Casserole
I found this recipe a few weeks ago and already have made it 3 times. I usually use 2 spaghetti squash so I can get more leftovers out of it and kind of wing some of the things I put in but definitely use this recipe as a base. It’s healthy, easy and even Dave-approved! (Mind you…Dave was really against spaghetti squash for a while and only wanted real pasta!)

Slow Cooker Buffalo Chicken
Buffalo chicken–need I say more? I love crockpot recipes because they are so easy. One tip is to make your baked sweet potatoes early too so you don’t have to wait forever during the week. I love the yogurt sauce too.

Rachel Ray’s Asian Meatloaf
I’ll sometimes prep the meatloaf and cook the night of but other times I know I’ll get home late so I’ll just bake the meatloaf ahead of time too. This morning I am on my way to NYC. In preparation for it, I made some overnight oats last night to try for the very first time today! I made the Tone It Up lemon honey overnight oats. They were really easy to make (greek yogurt, lemon zest, honey, coconut/almond milk and chia seeds) and I liked the fresh, lemon flavor. I topped with a little bit of shredded coconut and some cacao nibs because, why not?!
Also–today marks the halfway point for my one new thing a day in the month of August. I was a little nervous that it might be tough to get one new thing a day to do, but because I was allowing for simple things–it made it easier. The tougher part is always documenting on the blog. If I do the new thing in the afternoon, it’s more difficult to make time to write a blog post when I have to make dinner or other obligations. I prefer to do my new thing in the morning and have my blog post done early. I’ve set a few exceptions for myself regarding my blog challenge to save both myself and Dave from going a little crazy…
1 – Since my goal was to challenge myself to a new thing a day as inspiration to blog every day, I might not blog about the new thing if I already had something I wanted to blog about that day. For example, yesterday I wrote about my marathon training status and a catch up post from Saturday’s new thing. It felt a little much to write a 3rd blog post about my new thing for Sunday. Instead–I just shared on twitter.
2 – Be okay if I skip a day for a personal reason. I didn’t blog on Saturday. My new thing was seeing a movie with Dave Saturday night. It would have interrupted our night if I got home from the movie and just went straight to write a blog post versus spend time with Dave.
