Day 4 of the #ClassPassChallenge – I tried a new recipe AND baked on a weekday morning.
I am heading to a wedding this weekend and wanted to bring a treat–red velvet cookies. I got up super early this morning to make Sally’s Baking Addiction Red Velvet Chocolate Chip Cookies (see her website for the full recipe).
I woke up around 5:30 am, took my butter and 1 egg out of the fridge to get to room temp. The recipe only calls for one stick of butter so I cut the butter up to hopefully expedite the time it took for the butter to get to room temp. I got some coffee from Starbucks and did some work.
Once the butter was ready, it only took about 20 min to prep the dough. The thing that took the longest was letting the dough chill but I just did work while I waited. The cookies only need to be baked for 10-11 minutes so I was done baking the cookies before some people even get to work!
I highly recommend these cookies because they are pretty fast to make and the ingredients aren’t anything fancy. Mine don’t look very red or as beautiful as Sally’s but I swear they taste good (yes–I did taste test at 8 am in the morning). I am going to add more food coloring and also let them chill a little longer than an hour next time.
I don’t anticipate making cookies or baking before my work day every day but it was interesting to see what I could fit in the morning!
