I am trying to be better about making dinner and I didn’t make an exception for last night. I made the Taste of Home Thai Vegetable and Noodles and added some shrimp. Dave isn’t big on meals without some sort of meat in it so I thought he might like my slight modification. He did!

Two nights ago I had made East West Stir Fry and ran out of soy sauce. I needed soy sauce for dinner last night so after my yoga session with Kathryn, I jogged over to Shaws, picked soy sauce and ran home. Woohoo for multitasking! I have been so good this week about making meals instead of eating out. I even was good when he was out on a guy’s night because I made A Pinch of Yum Chicken Tamale Pie for myself. It was really easy and DELICIOUS! I love cornbread, so it definitely is a keeper. Dave and I ate it last night for dinner AND for lunch today!
