I’ve been seeing people rave about their Instant Pot and I finally caved to purchase one. And I’m in LOVE with it! It is incredible how much it saves time and also reduces the amount of dishes you have to deal with with clean up. Below are a few of the recipes I’ve tried so far!
Mushroom Risotto
My friend recommended this recipe. I love mushrooms so was really excited to try it. Risotto typically will take 30 minutes of stirring and cooking but the Instant Pot only takes about 5 minutes once you saute all of the add ins!

Honey Garlic Chicken
I’ve made this recipe twice because it’s so simple! I used chicken thighs but you can use chicken breasts too. I roasted potatoes and asparagus for sides.
Calrose Rice
I was making some other dish that I needed rice for and decided to give the Instant Pot rice cooking capabilities a try. I don’t think I’ll ever go back to boiling water for rice!

I’ve made this via the slow cooker but I think the pressure cooker version is better! It’s also quicker!

Cauliflower Tikka Masala
I like trying vegetarian recipes and the fact that it only takes 2 minutes in the pressure cooker was insane to me! I might do 3 next time because I wanted the cauliflower a little more tender.
