Whole Wheat Carrot Cake Muffin

I decided to not just make scones for the Pan-Mass Challenge bake sale, but also a healthier option-whole wheat carrot cake muffins!  I adapted this recipe from Fannetastic Food’s recipe which calls for whole wheat pastry flour instead of regular whole wheat flour.  Unfortunately, I couldn’t get to Whole Foods to get any pastry flour so risked using regular whole wheat flour.

This week’s menu and Urban Nester’s Gluten Free Baked Oatmeal Casserole

I’ve been spending money like crazy so I have to remind myself to keep making food whenever possible. Last night I made the Urban Nester’s Gluten-Free Baked Oatmeal Casserole so that breakfast is a little more special this week!

  • 2 cups gluten-free rolled oats
  • 1/3 cup brown sugar
