#ClassPassChallenge Day 9 – zucchini pancakes and homemade blueberry compote.
I intended to make a new overnight oats to try today but then I forgot so had to come up with something on the fly this morning to make. I had been wanting to make something with zucchini so searched for an easy breakfast pancake recipe. I love pancakes because they almost feel like dessert! 🙂
I settled on the Pancake Warriors healthy zucchini pancakes. I had all of the ingredients and it was really quick to make the batter. The only issue was that I had trouble with them staying in pancake form. The photo above is of the second batch. The first batch looks like mush. It made about 7 pancakes so I’ll likely eat the rest tomorrow for breakfast!
I was going to top my pancakes with maple syrup but then I was inspired by Ana Goes Fit to make the Food Network’s Blueberry Compote! I didn’t sugar in the recipe and substituted with a little bit of maple syrup. I didn’t realize how easy it was to make compote so I am definitely going to try this again with another fruit. I might also try to make some homemade jams some weekend!
The next pancake recipe I want to try is a sweet potato pancake. Do you have any recipes I should try?!
