The crock pot is my friend. I own 3 of them-one old school one, a 4 quart and a 6 quart crock pot with a timer (love having a timer!). And I am not going to lie…sometimes I have all three going at once! This usually happens on a winter Sunday when I’m prepping a bunch of food for the week.
However, yesterday I just had one going. My friend Sam mentioned how she made the Urban Moms Hawaiian Chicken which sounded delicious and I had to give it a try as well. Thank you Sam! Because it was DELICIOUS!
I did however make a few modifications that I may keep for next time since we liked how the meal turned out.
Apple cider vinegar. Believe it or not, I have apple cider vinegar but not regular vinegar! Instead of have to stop at the store on my way home, I decided to give the apple cider vinegar a try. I don’t know how different the meal would have been, but it might have given a little bit of a sweeter taste.
Onions! I love onions. Sometimes Dave says that it smells like I ate an entire onion (like an apple). Maybe I did…I don’t know why…but I LOVE onions! So I added some to this dish and Dave said that actually he loved the addition. The onions soaked up the pineapple juice and tasted really flavorful.
Things I Would Change for Next Time
Fresh pineapple. I absolutely fresh pineapple! And I bet using fresh pineapple would make it even more delicious!
- 2-3 chicken breasts (whole)
- 1 medium onion sliced
- ½ cup white sugar
- ½ cup apple cider vinegar
- 3 garlic cloves, minced
- 2 tbs soy sauce
- ½ can of large pineapple chunks
- ½ cup of pineapple juice (from can)
- 2 chopped bell peppers (I used red and yellow)
- Cook on low for 6-7 hours
- Shred and serve over rice
