This week’s menu and Urban Nester’s Gluten Free Baked Oatmeal Casserole

I’ve been spending money like crazy so I have to remind myself to keep making food whenever possible. Last night I made the Urban Nester’s Gluten-Free Baked Oatmeal Casserole so that breakfast is a little more special this week!

 

Urban Nester

Total Time: 50 minutes

Ingredients

  • 2 cups gluten-free rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Matchy Friends and Minty Snack Attack!

My latest obsession is fresh pineapple!

Oatmeal, the breakfast for champions!

Many runners have a traditional breakfast they have before a race.  My breakfast consists of the following:

  1. Oatmeal with banana mashed up in it
  2. Luna Bar (preferably the Smores kind!)
  3. 1/2 Bagel
  4. Half Dunkin Donuts Iced Coffee
